2 cups prepared salsa
4 large eggs
There are lots of salsas on the market so you can customize the eggs to your taste: Peach salsa. Extra hot salsa. Experiment.
Position a rack in the middle of the oven and preheat to 400 degrees F. Spoon the salsa into an 8-inch baking dish. Set in the oven and heat for 15 minutes.
Remove the baking dish from the oven. Use the back of a wooden spoon to create 4 evenly spaced wells in the salsa. Crack an egg into each of these wells. Return to the oven and bake until the whites are set but the yolks are still soft, 8 to 10 minutes. (For hard-cooked yolks, bake for 15 minutes.) Use a large spoon to scoop the eggs into serving bowls along with hot salsa.
