2 pounds sweet potato, peeled, grated
1 tablespoon fresh ginger, grated
2 tablespoons butter, melted
4 cups brown sugar
4 cups coconut milk
1 teaspoon grated nutmeg
Preheat oven to 375 degrees F. Combine all ingredients in a saucepot. Bring to a boil
and cook over medium heat until mixture thickens slightly. Pour into a greased 9” x 13” baking dish and bake for 35 to 45 minutes or until golden brown.
